Peanut Butter Cookies | Vegan Bake Off

Hello everyone!
It’s that time of the week again and this time it’s Biscuit Week! Well, it was last week… but I’m awful with time. Anywaaaay…
I made these beautiful cookies this week and thought I’d share the recipe. I’ve become ever so obsessed with peanut butter of late. I would put it in everything if I could.

Peanut Butter Cookies
75g Vegan Butter (such as Vitalite)
50g Peanut Butter (I used the Whole Earth Crunchy Peanut Butter)
50g Caster Sugar
50g Demerara Sugar
100g Plain Flour (I actually used self-raising this time as it was all I had but it worked just as well)
Pinch of Salt
Pre-heat the oven to 200c (gas mark 6)
1. Mix together the butter, peanut butter and sugar.
2. Add the flour and stir to make a dough.
3. Make about 17/18 balls of dough and space out on a baking tray lined with grease-proof paper.
4. Squish the balls down and make a criss-cross pattern on the top of each with a fork.
5. Bake for 15 minutes or until golden brown. If you leave them in slightly longer, they will go more of a biscuit texture and be more crunchy.
6. Let them cool in the baking tray for a few minutes before transferring to a cooling rack.
Et voila! Some tasty cookings which are delicious with a cup of tea!
